The Best Chocolate Chip Cookies Ever

This is my favorite chocolate chip cookie recipe. I've used it for years and it makes the best chocolate chip cookies ever.

I realise there are thousands of chocolate chip cookie recipes on the Internet. There are also probably hundreds of recipes out there that claim to make the best chocolate chip cookies ever, so adding mine shouldn't have been a priority for me. Yet here we are, with me talking about the best ever chocolate chip cookies. See, the recipe I'm sharing today is one I've been using for years now. When I say years, I think it's been over eight years now. I can't remember where I found it, and I wouldn't even be able to find it again, as it's changed so much over the years.

Why do I say it's the best chocolate chip cookie recipe ever ? Well, here's a list :
1) I use the recipe as the base for any kind of cookies (see these chocolate marshmallow cookies as evidence.) Remove some of the flour and replace it with cocoa powder to make chocolate cookies, for exemple. You can also use any kind of chocolate chips or chunks. I personally don't use chocolate chips, instead I cut up a bark of dark baking chocolate to make big chunks of chocolate (also, it's cheaper than chocolate chips, ha !) I've also used all white sugar or all brown sugar instead of half white/half brown sugar.
2) You can play around with the baking time. I bake the cookies for about 15 minutes and I think it's the perfect time ; the cookies stay soft in the middle but the edges are nice and golden. I've also been know to bake them for 15 minutes, then turning the oven off with the baking sheet still in ; the cookies keep baking, and they get a little caramelized and crispy. Make several batches and find your perfect baking time !
3) I've never heard anyone complain about this recipe ! People actually ask me to make these cookies. They're ones I'll bake on Christmas Eve to snack on while we wait for Santa ;) If I feel like baking but don't want to make something too complicated that involves a lot of dishes, I'll make this. One bowl, a spatula, and that's it ! Cookie recipes are always pretty easy and quick to make.

Here's the recipe for the best ever chocolate chip cookies :

Ingredients :
170g of butter, softened
100g of sugar
100g of light brown sugar
1 packet of vanilla sugar (optionnal)
2 eggs
1 tsp of vanilla extract
300g of flour
2 tsp of baking powder
1 tsp of salt
200g of chocolate chips

Instructions :
  • Cream the butter and sugars.
  • Add in the eggs and vanilla, mix until well incorporated.
  • Gradually mix in the flour, then add the baking powder and salt.
  • Stir in the chocolate chips.
  • Let the dough rest for 10 to 15 minutes in the fridge.
  • Preheat the oven.
  • Form cookie dough balls (using an ice scream scoop, or spoons), and place them on a baking paper covered baking sheet, spacing them as the cookies will spread as they bake.
  • Bake for 12 to 15 minutes, until the edges of the cookies are a golden color, before taking the chocolate chip cookies out of the oven and letting them cool.

    1. These cookies look and sound delicious! I'm looking forward to making them while I wait for Santa, too ;-) I love your idea of chopping up a block of dark chocolate instead of using chips - big dark choc fan here, plus the chunks are so much tastier! Just wondering if you bake these cookies in a moderate oven (temperature approx 180 degrees Celsius)?

    2. Thanks Claire ! The chunks also offer a much better chocolate to cookie ratio with every bite, ha !
      I never mention oven temps in my recipes as my oven is quite old and I never push it past oven mark 5 when baking, haha ! I bake these cookies on oven mark 4/120°C. I'd rather bake them longer on a lower temperature than end up with burnt rocks :( If you bake them at 180°C, just reduce the baking time (I'd start checking at around 8 minutes, and then every 2 minutes if they're not done yet)
