Chocolate Banana Mini Cakes

This recipe for moist chocolate banana mini cakes is the perfect way to use up ripe bananas.

After chocolate chip banana cookies, here come chocolate banana mini cakes. I'm just thinking about those poor ripe bananas, you know. I want you to use them up, and making these chocolate banana cakes is the perfect way to do just that.
Chocolate and banana is a well-known flavor pairing, and these mini cakes showcase just how amazing a pairing it is. You could also use a muffin pan to make these chocolate banana cakes.
These chocolate banana mini cakes stay soft and moist, even after a couple days left on the kitchen counter.

Here's the recipe for chocolate banana mini cakes :

Ingredients :
85g of flour
25g of cocoa powder
75g of sugar
1 tsp of baking powder
1/4 tsp of baking soda
1/8 tsp of salt
1 ripe banana, mashed
120g of plain yogurt
1 small egg
2 tbsp of vegetable oil
1 tsp of vanilla extract

Instructions :
  • Preheat the oven.
  • Whisk together the dry ingredients (flour, cocoa powder, sugar, baking powder and baking soda), and set aside.
  • In another bowl, mix the banana, yogurt, egg, oil and vanilla extract.
  • Mix in the dry ingredients.
  • Grease (and/or line with baking paper) a mini loaf pan and divide the batter evenly (about ¾ full). Bake for 20 to 25 minutes (150°C/180°C), until a toothpick inserted in the middle comes out dry.
  • Let cool for a few minutes before taking the chocolate banana mini cakes out of the pan.

    White Chocolate Truffles

    White chocolate truffles are an easy no-bake treat that only requires four ingredients.

    I really thought making truffles would be more difficult. It turns out truffles are simply ganache that you've let set overnight before rolling it in cocoa powder. That's it.
    Making these white chocolate truffles requires no baking : you only have to melt the chocolate, butter and cream in a bain-marie, add in some icing sugar, and then wait for it to set. You'll then have to shape the truffles by rolling them between your palms, then coat them with cocoa powder or sprinkles.

    Christmas is less than a week away ! If you need a last minute treat or food gift, then I introduce you to chocolate corn flakes clusters. They only require 2 ingredients (dark chocolate and corn flakes), and it's a no-bake recipe ! Also, as a bonus, you only need a bowl and a spoon to make them, which means no extra dishes to wash. I added some festive red, green and white non-pareil sprinkles to the top of the chocolate corn flake clusters, but you could leave them plain or use any kind of sprinkles for any kind of holiday. You can also use white or milk chocolate instead of dark chocolate ! This no bake recipe is really easy to make, so chocolate corn flakes clusters could also be an activity to do with kids this Holiday season !

    I've had my donut maker for a long time now. There were recipes given with the maker, but I didn't really like the donuts I ended up with.

    Plus, they'd dry out really fast (like, straight out of the maker fast. Not good). What do you do in that case ? Turn to Google. This recipe came up on several blog posts, so I decided I'd try it. Success ! These donuts were actually tasty.

    Sure, they don't taste like actual donuts, but they're still delicious.

    Ingredients :
    150g of all-purpose flour
    100g of granulated sugar
    1 packet (11g/2tsp) of baking powder
    1 pinch of salt
    150 mL of milk
    2 eggs
    4 tbsp of vegetable oil

    Instructions :
  • Whisk together all the dry ingredients, then add the milk. Mix together and add the eggs and the oil, mix until well incorporated.
  • Transfer the batter to a squeeze bottle, and bake the donuts in the donut maker.
  • Cover with icing sugar or melted chocolate.
