Chocolate Banana Mini Cakes

This recipe for moist chocolate banana mini cakes is the perfect way to use up ripe bananas.

After chocolate chip banana cookies, here come chocolate banana mini cakes. I'm just thinking about those poor ripe bananas, you know. I want you to use them up, and making these chocolate banana cakes is the perfect way to do just that.
Chocolate and banana is a well-known flavor pairing, and these mini cakes showcase just how amazing a pairing it is. You could also use a muffin pan to make these chocolate banana cakes.
These chocolate banana mini cakes stay soft and moist, even after a couple days left on the kitchen counter.

Here's the recipe for chocolate banana mini cakes :

Ingredients :
85g of flour
25g of cocoa powder
75g of sugar
1 tsp of baking powder
1/4 tsp of baking soda
1/8 tsp of salt
1 ripe banana, mashed
120g of plain yogurt
1 small egg
2 tbsp of vegetable oil
1 tsp of vanilla extract

Instructions :
  • Preheat the oven.
  • Whisk together the dry ingredients (flour, cocoa powder, sugar, baking powder and baking soda), and set aside.
  • In another bowl, mix the banana, yogurt, egg, oil and vanilla extract.
  • Mix in the dry ingredients.
  • Grease (and/or line with baking paper) a mini loaf pan and divide the batter evenly (about ¾ full). Bake for 20 to 25 minutes (150°C/180°C), until a toothpick inserted in the middle comes out dry.
  • Let cool for a few minutes before taking the chocolate banana mini cakes out of the pan.

    Double Chocolate Cookies

    Soft double chocolate cookies are made with white chocolate chips folded into a dark chocolate cookie base.

    I called these cookies "double chocolate cookies" because "chocolate white chocolate chip cookies" or "white chocolate chip chocolate cookies" seemed like a mouthful.
    These double chocolate cookies are amazing : the rich flavor of cocoa in the base and the sweetness of white chocolate make these cookies the perfect after-school snack for kids, and they'll be perfect with a cup of coffee for adults, too ;) I based this recipe on my best ever chocolate chip cookies recipe, as always. I told you it was versatile !
    These double chocolate cookies don't spread much, so don't forget to gently press down on the cookie dough balls before baking ! Eat warm straight out of the oven, while the white chocolate chips are still all gooey and melting, or keep in an airtight box to eat when the mood strikes :)

    Here's how to make these white chocolate chip chocolate cookies, aka double chocolate cookies :

    Ingredients :
    170g of butter, softened
    200g of sugar
    2 eggs
    1 tsp of vanilla extract
    210g of flour
    80g of cocoa powder
    2 tsp of baking powder
    1 tsp of salt
    200g of white chocolate chips

    Instructions :
  • Cream the butter and sugar.
  • Add in the eggs and vanilla, mix until well incorporated.
  • Whisk together the flour, cocoa, baking powder and salt, and gradually add the dry ingredients to the butter/sugar/eggs.
  • Stir in the chocolate chips.
  • Preheat the oven. Form cookie dough balls (using an ice scream scoop, or spoons), and place them on a baking paper covered baking sheet. Gently press down on the cookie dough balls to flatten them a little.
  • Bake at 180°/350°F for 10 to 12 minutes. The edges of the cookies should look baked while the center should still look a little soft. Let the baked double chocolate cookies cool on a wire rack.

    Two Ingredients Chocolate Buttercream Frosting

    Here's how to make a fluffy chocolate buttercream frosting with only two ingredients. This frosting can even be made in the microwave !

    Do you ever get a craving for chocolate frosting but don't want to wait for butter to soften, or you just can't be bothered to cook egg whites to make swiss meringue buttercream ? Well then, I've got a recipe for you !
    This chocolate buttercream frosting is made using only two ingredients : chocolate, and unsalted butter. You can either make it on a double-boiler (bain-marie) or in the microwave. You just have to use the same amount (weight) of chocolate and butter, melt them and stir to combine. Once it's cooled and set, you use a hand- or stand-mixer to beat the frosting until it's all fluffy. And that's it !

    Christmas is less than a week away ! If you need a last minute treat or food gift, then I introduce you to chocolate corn flakes clusters. They only require 2 ingredients (dark chocolate and corn flakes), and it's a no-bake recipe ! Also, as a bonus, you only need a bowl and a spoon to make them, which means no extra dishes to wash. I added some festive red, green and white non-pareil sprinkles to the top of the chocolate corn flake clusters, but you could leave them plain or use any kind of sprinkles for any kind of holiday. You can also use white or milk chocolate instead of dark chocolate ! This no bake recipe is really easy to make, so chocolate corn flakes clusters could also be an activity to do with kids this Holiday season !

    Chocolate Cake (No Eggs)

    This delicious, moist chocolate cake is made without eggs.

    I made this chocolate cake because I wanted cookies.
    Problem was, I was out of eggs.
    I did try to find a recipe for egg free cookies, but I soon realised I probably wouldn't like the result ; I'm not a fan of dry cookies. I then set my mind on finding a recipe for a chocolate cake I could bake without eggs.

    I found this one, and then realised I was also out of oil. Seriously, this kind of thing only happens to me. I had butter, though, so I replaced the oil with butter and I was able to eat egg free chocolate cake.
    And it was delicious. This chocolate cake is moist, and light despite it having no eggs. Add a generous dusting of icing sugar, some chocolate flakes, and you'll be in chocolate cake heaven. It would definitely pair up well with whipped cream, too.

    After a break, we're back to chocolate ! In cake form, obviously. Let me introduce you to fondant au chocolat, a classic french dessert, the lovechild of chocolate brownies and chocolate lava cakes. Yep, you read that right. Fondant au chocolat is smack dab in the middle between those two desserts. It is delicious.

    In French, fondant means melty/melting, so you can be assured that this chocolate cake is just melt-in-your-mouth heavenly goodness. Eat it warm with a scoop of vanilla ice cream, or cooled with a couple tablespoons of vanilla custard or whipped cream.

    Triple Chocolate Brownies

    Milk and white chocolate chips are added to a dark chocolate brownie base to make these brownies a delicious triple threat !

    It was so hot outside the day I made these Millionaire's Shortbread that the caramel wasn't cooling down and the chocolate top wouldn't set. I had to put it in the freezer for 20+ minutes so it would set, and even when taking pictures of it, I had to go back and forth between the freezer and my photo set-up. Why am I telling you this ? Because a few days later the weather did a 180 and we had rain and wind. What does that weather call for ? Chocolate brownies, of course.

    See, I think this is called Millionaire's Shortbread because a small bite of this thing has about a million calories. I could have eaten the whole plate and then I'd have gained six pounds. Millionaire's Shortbread is that delicious but also very not healthy (I mean, hello, biscuit base + caramel center + two types of chocolate to top it all off = me not looking like a supermodel on the beach this summer. Heh, who cares.)
