Easter Chocolate Cookie Bars

Save up your Easter eggs to make these Easter chocolate cookie bars ! These chewy bars are made with 6 basic ingredients and as much chocolate as your heart desires.

Easter is coming ! I’ve got a recipe for you to use up your extra Easter chocolate : easter eggs cookie bars.

These Easter egg cookie bars only require six basic ingredients, and as much Easter chocolate as you want ! I used some chocolate eggs and some mini Milka eggs. I also found a couple boxes of mini Smarties so I added them. You could use Cadbury Mini Eggs for these cookie bars, or Creme Eggs ; you could also add some chocolate chips. Ooh, or M&M's !
The recipe I used is this one. I used half white sugar/half light brown sugar. The recipe for these Easter chocolate cookie bars says to melt the butter, and I did, but I’d recommend micro-waving it until it is just about to start melting : the bottom of the cookie bars were really greasy, so next time I make them, I’ll only microwave the butter until it looks really, really soft.

Here's how to make Easter chocolate cookie bars :

Ingredients :
115g of butter, very soft
100g of light brown sugar
100g of sugar
1 egg, beaten
2 tsp of vanilla extract
125g of flour
Easter chocolate eggs

Instructions :
  • Preheat the oven.
  • Beat the very soft butter (microwave until it looks like it’s about to start melting) with the sugars. Add in the beaten egg and the vanilla.
  • Stir in the flour, and the chocolate eggs, broken in pieces if they are big.
  • Spread the cookie bar dough in a baking paper lined pan (8x8inch/20x20cm).
  • Bake for 25 to 30 minutes (150°/180°C)
  • Let cool before cutting into squares.
