Banana Oat Bars

These oat crumble bars are full of banana flavor and are super easy to make with only a few ingredients !

This banana oat bars recipe is the same as this applesauce oat bars recipe, only the applesauce has been switched for mashed bananas and banana slices. These banana oat squares are super easy to make, and they only require basic ingredients (flour, sugar, butter, oats, baking powder and salt, and bananas). This oat bar recipe is egg-free.
These oatmeal banana bars will be the perfect after-school snack for Autumn !

To make these banana oat bars, you will need to whisk together the dry ingredients (flour, sugar, oats, salt and baking powder), and then add in the softened butter. Combine using your fingers until it forms crumbs. You then have to flatten some of the mixture in a baking pan, and bake for 15 minutes.
Mash a couple of bananas, spread over the bottom of the bars, add banana slices over the mashed bananas, and sprinkle the rest of the oat crumble on top before baking for 35 minutes.
Keep these banana bars in a box for up to a week. I kept mine at room temperature.

Here's how to make banana oat bars :

Ingredients :
190g of flour
150g of sugar
1/8 tsp of salt
1 tsp of baking powder
150g of rolled oats
175g of butter, softened
3 bananas

Instructions :
  • Preheat the oven.
  • In a bowl, whisk together the flour, sugar, salt, baking powder, and oats.
  • Add in the butter and combine (using your fingers) until it forms crumbs.
  • In an 8x8in (20x20cm) pan covered in baking paper, spread a little over half of the mixture, and flatten it (using the bottom of a glass or your fingers) to form the base of the banana bars. Bake for 15 minutes.
  • Mash two of the bananas, and slice the third one.
  • Take the pan out of the oven, spread the mashed bananas on the base, add the banana slices and sprinkle the rest of the mixture on top.
  • Bake for 35 minutes (at 150/180°C).
  • Let cool completely before cutting into bars.

    Strawberry cake (this version, filled with cream and fresh strawberries) has been one of my favorite desserts ever since I was a little one. Most birthday cake pictures from my first ten years on this planet are of fraisiers. I think it's because it combines a lot of my favorite things when it comes to desserts : strawberries, cake, and cream. A lot of cream.

    Here's the recipe for chocolate banana mini cakes :

    Ingredients :
    85g of flour
    25g of cocoa powder
    75g of sugar
    1 tsp of baking powder
    1/4 tsp of baking soda
    1/8 tsp of salt
    1 ripe banana, mashed
    120g of plain yogurt
    1 small egg
    2 tbsp of vegetable oil
    1 tsp of vanilla extract

    Instructions :
  • Preheat the oven.
  • Whisk together the dry ingredients (flour, cocoa powder, sugar, baking powder and baking soda), and set aside.
  • In another bowl, mix the banana, yogurt, egg, oil and vanilla extract.
  • Mix in the dry ingredients.
  • Grease (and/or line with baking paper) a mini loaf pan and divide the batter evenly (about ¾ full). Bake for 20 to 25 minutes (150°C/180°C), until a toothpick inserted in the middle comes out dry.
  • Let cool for a few minutes before taking the chocolate banana mini cakes out of the pan.

    Chocolate Chip Banana Cookies

    What could be better than chocolate chip cookies you ask ? Chocolate chip cookies full of banana flavor ! These banana chocolate chip cookies are perfect as a quick and easy snack.

    Maybe I should've named this blog A Cup of Cookies. I do seem to share a lot more cookie recipes than recipes that involve sprinkles, after all. It's just that when it comes to baking, cookies are one of my favorite things to whip up. If I had to list my favorite things in baking, sprinkles and cookies would have to share the first spot. But let's talk about these chocolate chip banana cookies now.
    This is another recipe I've used for years. I've made these banana cookies several times to get the perfect (for me anyway) recipe. I wouldn't even be able to tell you which recipe I used to make them in the first place, first because it's been so long I've forgotten, and second because I've changed ingredient measurements.
    This is the perfect recipe to make if you want to use up that ripe banana that's been seating on the counter for a week. Now, I call these cookies chocolate chip banana cookies, but I do use chocolate chunks. I've said before in this best ever chocolate chip cookies recipe post that I cut up a block of chocolate to get chunks, because it's cheaper and it's got a way better chocolate to cookie bite ratio ;) You can obviously use either.
    Now, don't expect crispy cookies. These banana cookies have a bit of a cake-like texture, and they'll stay soft and moist even after a couple days on the counter. :)

    Here's how to make chocolate chip banana cookies :

    Ingredients :
    180g of flour
    1/8 tsp of salt
    1 tsp of baking powder
    75g of butter, softened
    120g of light brown sugar
    1 ripe banana, mashed
    1 egg
    1 tsp of vanilla extract
    100g of chocolate chips

    Instructions :
  • Preheat the oven.
  • Whisk together the flour, salt and baking powder. Set aside.
  • In an another bowl, cream the butter and sugar. Mix in the egg, mashed banana, and the vanilla extract.
  • Add in the dry ingredients and chocolate chip. Mix until everything is incorporated.
  • Using spoons or an ice cream scoop, form cookie dough balls on a baking paper covered baking sheet, making sure to space them out as the cookies will spread when baking.
  • Bake for 10 to 12 minutes (150°C/180°C), until the edges are a golden color.

    Easy French Apple Tart

    Make an easy French tart with fresh apples and applesauce.

    I'm not even sure this should count as a recipe. I mean, want to know how to make an easy French apple tart ? Here's what you should do : get a pie crust (I used a puff pastry crust but you can use whichever you want), pour some applesauce in your pie crust and cover with apple slices. Bake for about 40 minutes. There. You have a French apple tart. I'm not sure what else there is to say, really.

    Easy Apple Crumble

    This easy apple crumble requires only 4 ingredients. Plus, it's got fruit, so that means it's healthy, right ?!

    Once upon a time, I hated cooked fruit. As long as the fruit in the dessert wasn't actually baked with the dessert, I was okay, but things like warm apple cake or apple tart ? Blegh.
    Then one day I decided to get over my fear of warm fruit because there was an apple crumble in the oven and it made the house smell wonderful. I tried it, and ever since then, I can actually tolerate cooked fruits in desserts.

    This cake is my way to hang on to those last couple weeks of summer. I mean, nectarines and whipped cream scream summer, right ?

    Pinterest and Instagram have already been all pumpkin-everything and apple this and Halloween that these last few weeks, and I'm just scrolling through my feeds, internally screaming "SUMMER ISN'T OVER YET !". Let's just enjoy early September, when it's still warm enough to go out without a coat, before the leaves all turn yellow and it seems like it won't ever stop raining. I realise we're entering the most exciting time of year, with Halloween and Christmas (well, and Thanksgiving in between for those of you who celebrate). The thing is that a week before Halloween, people'll be talking about Thanksgiving like Halloween is a thing of the past, and it will be the same with Thanksgiving and Christmas, and can't we just enjoy things before moving on to the next one and time is just flying by so fast what even is the point of life ?
    Alright, sorry, went a bit existential crisis on you there. I'll end my rant and go back to cake.

    Raspberry Mascarpone Cupcakes

    Spring is here !
    Even though we've had low temperatures and I'm still wearing jumpers, we are in late April, so it is technically Spring. That means I'm ready for recipes that include fruits. Chocolate cake is for Winter, raspberry anything is for Spring and Summer.
    These vanilla cupcakes have a delicous raspberry filling and a light and fluffy mascarpone frosting.
    These raspberry filled cupcakes were made a couple days after my birthday, as an excuse to use up the leftover mascarpone frosting I used for my birthday cake (being the cake baker in the family means you have to bake your own cake). Also, the raspberry filling is amazing and I needed more of it in my life. So, yep, these cupcakes are the result of all that.
