Chocolate Marshmallow Cookies

These chocolate cookies are topped with mini marshmallows : they're a hot chocolate in cookie form !

Remember how in my last post I said I wanted cookies ? Well, I finally got them !
And they're not just any cookies, either, they're chocolate and mini marshmallow cookies !

I used the cookie recipe I've been using for years (and that I still haven't posted on here, shame on me !). I just tweaked the flour amount, removed the packet of vanilla sugar I usually add, and added cocoa powder.
The cocoa flavour and the melting marshmallows instantly made me think of a steaming cup of hot chocolate. These chocolate marshmallow cookies would be the perfect treat to leave for Santa, I think. He really wouldn't complain if he had to eat a couple of these 😉

I used Haribo's Mini Chamallows for the cookies, but you can obviously use any brand you can find. I would have also added chocolate chips, but I didn't have any on hand, so if you want to add some to the cookies, 100g of chocolate chips should be enough.

Here's how to bake chocolate marshmallow cookies :

Ingredients :
170g of butter, softened
100g of sugar
100g of light brown sugar
2 eggs
1/2 tsp of vanilla extract
250g of flour
60g of cocoa powder
2 tsp of baking powder
1 tsp of salt
Mini marshmallows

Instructions :
  • Cream the butter and sugars, then add in the eggs and vanilla.
  • Whisk together the flour, cocoa powder, baking powder and salt.
  • Gradually add the dry ingredients into the butter/sugars.
  • Let the dough chill in the fridge for 10 to 15 minutes.
  • Preheat the oven.
  • Using a spoon or an ice cream scoop, form cookie dough balls and place them on a baking paper covered baking sheet.
  • Add some mini marshmallow to the top of the cookie dough balls, and bake for 8 minutes.
  • After 8 minutes, take the baking sheet out of the oven, and add some more mini marshmallows to the top of the cookies.
  • Bake for another 3 to 5 minutes.
  • Let the cookies cool on the baking sheet for 2 minutes, then cool on a wire rack.

  • Notes :
  • I used about 40g of mini marshmallows, but you can use more or less.
  • You can add 100g of chocolate chips to the cookie dough.
